Low Carb Peanut Butter Cookies

So many cookie recipes out there require butter. While we totally love butter, sometimes I run out. Rather than run to the store and buy some butter just to make cookies, I wanted to find another option. Maybe there is something better than butter out there. Maybe there is a delicious, butter substitute that will make incredible cookies. Guess what- there is!

Using cream cheese in place of butter can make your cookies truly amazing. Of course, using cream cheese in place of butter doesn’t work for every recipe out there. Some cookie recipes just need butter and nothing else will do. However, in this keto cream cheese cookie recipe, the cheese is king.

Cream cheese gives these peanut butter cookies a nice, subtle tangy taste. It also makes the cookies have a really nice, smooth mouth feel. They literally melt in your mouth after just one bite. Cream cheese also adds lots of healthy fats to the cookies. We keto followers know that fat is important. Fat is fuel! All those good fats make you want to have more than one cookie (and you totally can!).

Peanut butter adds another layer of delicious, nutty fats to these cookies. I can never get enough peanut butter! I have actually made these keto cream cheese cookies using almond butter too. They bake slightly thinner since the almond butter is a little softer than peanut butter. However, if you are a fan of a crunchier cookie, give the almond butter a try! Any smooth nut butter should work well. I might just try hazelnut butter next!

One thing you might notice when looking at this recipe is the lack of flour. While I never use white wheat flour in a keto recipe, I do often add almond flour, coconut flour or other low carb flours. These cookies don’t need any of that! They actually hold together perfectly with just the cream cheese, peanut butter and erythritol. It’s pretty amazing! And very convenient is you have no keto flour on hand.

One little secret that I often use in cookie recipes is to switch up the extract. I love vanilla extract and think it makes cookies taste incredible. You’d be surprised how differently a cookie with vanilla and one without vanilla can taste. However, I like to switch it up completely and use almond extract. Almond extract has such a wonderful, rich taste that makes people go crazy for the cookies. Everyone is always asking me what that unique taste is. Its just almond extract! A totally keto approved ingredient that will transform any cookie recipe. It works great with these cream cheese cookies, especially if you are also giving almond butter a try in place of peanut butter.

Instructions
  1. Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.
  2. Add all of your ingredients to a large mixing bowl and blend using a paddle attachment or a large spoon. Mix well until a thick, smooth dough has formed.
  3. Scoop the cookies into about 2 tablespoon sized balls. Place the cookie dough scoops on the prepared sheet tray, leaving them as tall piles (do not squish them flat!).
  4. Bake the cookies in the preheated oven for 12-14 minutes or until the edges of the cookies just begin to turn golden brown.
  5. Remove the tray from the oven and let the cookies cool on the tray for about 5 minutes before moving to a cooling rack and enjoying!
