- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups So Nourished powdered erythritol
- 1 teaspoon baking powder
- 2 large eggs whisked
- 2 ripe avocados pitted and mashed
- 1/4 cup coconut oil melted
- 1/3 cup dark chocolate chopped, at least 80% cacao
- Pinch salt
- Preheat the oven to 325°F and grease a square baking pan with coconut oil.
- Whisk together the cocoa powder, erythritol, baking powder, and salt in a mixing bowl.
- In a separate bowl, beat the eggs then whisk in the mashed avocado.
- Stir the dry ingredients into the wet then whisk in the coconut oil and melted chocolate.
- Spread the batter evenly in the pan and bake for 30 to 35 minutes
- Let the brownies cool completely before slicing them into squares to serve.
