- 2 cups almond flour
- 1/4 cup So Nourished powdered erythritol
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup coconut oil melted
- 1 tablespoon vanilla extract
- 5 Granny Smith apples cored and chopped
- 1/4 cup chopped almonds
- Preheat the oven to 350°F and lightly grease a 2-quart baking dish with cooking spray.
- Whisk together the almond flour, erythritol, cinnamon, nutmeg, and salt in a bowl.
- In another bowl, whisk together the coconut oil and vanilla.
- Whisk the wet ingredients into the dry to form a crumbled mixture.
- Spread the apples and almonds in the baking dish and top with the crumbled mixture.
- Cover with foil and bake for 45 to 50 minutes until the filling is bubbling.
- Remove the foil and bake another 10 minutes until browned. Cool slightly before serving.
