- 3/4 cup heavy whipping cream divided
- 1 tablespoon coconut oil
- 1/2 teaspoon vanilla extract
- 1 small egg yolk
- 1 tablespoon butter
- 1 cup thinly sliced peaches
- 1/2 teaspoon ground cinnamon
- Whisk together ¼ cup of the heavy cream, coconut oil, and vanilla in a small saucepan.
- Heat over medium heat until well combined then reduce heat and simmer on low for about 5 minutes until thickened and creamy.
- Remove from heat and whisk in the egg yolk then let cool to room temperature.
- Whip the remaining cream until stiff peaks form then fold into the vanilla cream mixture.
- Chill the vanilla cream for 30 minutes while you prepare the peaches.
- Heat the butter in a skillet over medium heat.
- Add the sliced peaches and sauté until just browned then toss with cinnamon.
- Spoon the vanilla cream into bowls and top with the warm peaches.
