- 1 (8-ounce) package cream cheese softened
- 3/4 cup natural peanut butter
- 3/4 cup So Nourished powdered erythritol
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 4 ounces dark chocolate (90%) chopped
- 1 tablespoon coconut oil
- Beat the cream cheese until smooth then beat in the peanut butter, erythritol, and vanilla extract.
- While beating, drizzle in the heavy cream and beat until smooth and well combined.
- Divide the mixture between 12 popsicle molds and place a popsicle stick in each then freeze for about 4 hours or until solid.
- Remove the popsicles carefully from the molds and place them on a parchment-lined baking sheet in the freezer.
- Place a heatproof bowl over a saucepan of simmering water and add the dark chocolate and coconut oil.
- Heat until the chocolate melts then stir smooth and remove from heat.
- Dip the popsicles in the chocolate and place them back on the baking sheet and freeze until the chocolate hardens then serve.
