- 1 (8-ounce) package cream cheese (softened)
- 3 large strawberries (diced)
- 2 tablespoons So Nourished powdered erythritol
- 1 teaspoon vanilla extract
- 6 to 8 drops liquid stevia extract
- 1/2 cup heavy whipping cream
- Beat the cream cheese in a bowl until creamy then add the strawberries.
- On medium speed, beat until the strawberries are fully incorporated.
- Add the erythritol, vanilla, and stevia extract then beat until well combined.
- In a separate bowl, whip the heavy cream to stiff peaks.
- Fold the whipped cream into the cream cheese mixture in three batches.
- Spoon the mousse into dessert cups and chill until ready to serve.
