- 1/2 cup fresh squeezed lemon juice
- 1 tablespoon fresh lemon zest
- 3/4 cup So Nourished powdered erythritol
- 2 teaspoons ground psyllium husk
- 1 (14-ounce) can coconut milk
- Pinch salt
- Combine the lemon juice and lemon zest in a double boiler over medium heat.
- Stir together the powdered erythritol, psyllium husk, and salt in a small bowl.
- Whisk the dry ingredients into the lemon juice mixture then whisk in the coconut milk.
- Bring the water in the double boiler to boil then start whisking the mixture constantly until it thickens.
- Turn off the heat but keep whisking for a minute then set aside to cool for 1 hour, whisking occasionally.
- Cover and chill the curd overnight then spoon into bowls to serve.
