If you've never made flan yourself, then the process may seem a little intimidating. However, rest assured you can easily prepare this in the comfort of your own kitchen. The mixture itself comes together easily on the stovetop by bringing everything to a boil and then allowing it to cool. Most of the cooking is accomplished in the oven which is a terrific option if you want a dessert you can pop in the oven and then enjoy once it's done. There's no need to hover in the kitchen!
Making caramel while following a keto diet can be tricky. Erythritol will caramelize slightly when left to boil in the pan however it takes a while and, just as with sugar, you can go from having a beautiful golden caramel to a burned sugar in a matter of seconds. In order to skip the hard part of making flan (getting the caramel just right), we simply boiled our erythritol slightly to make the top sugary layer of this flan. We added a touch of blackstrap molasses to the sugar to make it that beautiful brown color. Molasses does contain carbs so you do not want to use too much of it- just a touch will do! However, if you want to keep the carbs in this recipe at zero, skip the molasses- the flan will taste great without it!
When you skip adding the optional molasses to this recipe, it's absolutely sugar-free and keto-friendly. How amazing is that! So much flavor without any carbs! Serve this to guests at your next party or make it to enjoy by yourself, at home. The flan will keep in the fridge for about a week (but it has never lasted that long in our house- we eat it too quickly!). You and your guests are sure to fall in love with the coconut flavor that takes center stage in this low carb dessert and no one will ever guess that it is a sugar-free dessert- it is just too delicious!

- 1 cup So Nourished powdered erythritol
- 1 1/3 cup heavy cream
- 1 cup water
- 5 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon coconut extract
- 1/2 teaspoon molasses (optional)
- Pinch salt
- Combine ½ cup of the erythritol and the molasses (if using) in a small saucepan over medium-low heat.
- Heat until the erythritol is melted then whisk smooth and pour into a 9-inch deep pie plate.
- Let the mixture stand for 10 minutes while you heat the cream and water in a saucepan.
- Once the mixture is boiling, remove from heat.
- Whisk together the eggs and salt with the remaining ½ cup erythritol in a bowl then whisk a cup of the warmed cream into the egg mixture.
- Pour the mixture from the bowl into the saucepan with the rest of the cream and stir in the vanilla and coconut extracts.
- Whisk smooth then pour into the pie plate.
- Place the pie plate inside a baking dish and add water, filling the dish to a depth of 1 inch.
- Bake for 55 to 60 minutes at 325°F until the center of the flan is set but still wiggles then remove the pie plate and place it on a wire rack.
- Cool the flan for an hour then transfer to the refrigerator to chill before serving.
