- 1/2 stick unsalted butter (softened)
- 1/4 cup So Nourished monk fruit erythritol sweetener
- 6 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup almond flour
- 6 tablespoons ground hemp seed
- 1 tablespoon ground cinnamon
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- 3/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- water (as needed)
- Preheat the oven to 350°F and line a baking sheet with parchment.
- Beat the butter and monk fruit sweetener together until creamy then beat in the eggs and vanilla extract.
- In a separate bowl, whisk together the almond flour, hemp seed, cinnamon, ginger, baking soda, nutmeg, salt, and pepper.
- Whisk the dry ingredients into the butter mixture then stir in up to 2 tablespoons of water, as needed, to reach a dough-like consistency.
- Spoon the batter onto the baking sheet and bake for 15 to 20 minutes until browned.
- Cool the cookies for 5 minutes then transfer to a wire rack to cool completely.
