For those who love bread and want to go low-carb, keto-friendly bakeries are a dream–but one that is quickly becoming a reality. Bakers around the globe are joining the world of keto and bringing their recipe books with them. This means high-fat, low-carb pastries that will make reducing your waistline more appealing than ever. Here are a few things you should know about baking and keto:

Keto and Carbs

The keto diet restricts carbs while increasing intake of fats with a moderate amount of protein. For many, the idea of reducing carbs is the most daunting part of making the switch to keto (and sticking with it). Fortunately, reducing carbs doesn't mean removing them, and some bakers are exploiting that distinction.

Starting Out

A West Edmonton baker1 began integrating keto-friendly options as a way to meet her own dietary restrictions. She modified her recipes to be made with almond or coconut flour; this doesn't completely eliminate the carbs, but it reduces them to a level that accommodates a keto diet. At the same time, she uses the recipes to increase fat content through cream, butter, eggs, and cheese.

Market Appeal

The appeal of low-carb pastries extends far beyond the world of keto. The baker discovered that the market for items with fewer carbs was broader than anticipated. She is growing her business and developing new recipes to meet the higher demand for her products, and she isn't the only one.

Catching On

A baker in Destin2 converted to the keto diet after watching food documentaries on Netflix. The modification to her own diet quickly spilled over to the baking she did for herself and others. The recipes became the core of her company, Keto Kreations.

Though she doesn't currently have a brick and mortar store, her bakery items are available for purchase, and she is looking to expand in the near future.

Accessing Keto

One of the chief complaints regarding the keto diet is the amount of time and energy required to maintain it. A unique aspect of the growing trend in keto baking is that the bakers themselves have adopted the keto diet. This personal connection allows them to modify recipes and techniques that will not only meet the needs of the occasional low-carb customer but also provide access for those who maintain a low-carb lifestyle.

Attaining low-carb success can be difficult. Meals have to be planned ahead and taking in the right amount of the right type of calories can be exhausting. With more and more restaurants and bakers arriving in the land of keto, it is becoming easier for the every day (non-baker) to access resources and recipes to make the keto diet a reality.
