- 7 ounces cream cheese (softened, divided)
- 1 1/2 tablespoons heavy cream
- 2 teaspoons fresh lemon juice
- 1 1/2 teaspoons white vinegar
- 2 slices cooked bacon (chopped)
- 2 tablespoons sliced scallions
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 tablespoons psyllium husk powder
- 1/2 teaspoon baking powder
- 2 large eggs
- 1 1/2 cups shredded mozzarella cheese
- 2 teaspoons sesame seeds
- Combine 6 ounces cream cheese with the heavy cream, lemon juice, and vinegar in a bowl.
- Mix on medium speed until well combined then stir in the bacon and scallions.
- Cover and chill while you prepare the bagels.
- Preheat the oven to 400°F and line a baking sheet with parchment.
- Whisk together the almond flour, coconut flour, psyllium husk, and baking powder in a bowl.
- Stir in the eggs then set aside.
- Melt the mozzarella cheese together with the remaining cream cheese in a small saucepan on medium heat.
- Stir smooth then stir the melted cheese into the flour mixture.
- Turn the dough out onto a flat surface and knead well then divide into 6 pieces.
- Roll each piece of dough into a cylinder then shape it into a ring and place on the baking sheet.
- Sprinkle with sesame seeds and bake for 20 minutes until browned.
- Let the bagels cool a little then slice in half and toast them.
- Spread the bacon scallion cream cheese over top to serve.
