- 1 pound cremini mushrooms (whole)
- 1 teaspoon olive oil
- 1 pound ground Italian sausage
- 3 cloves minced garlic
- 1 (8-ounce) package cream cheese (softened)
- grated parmesan cup grated parmesan (divided)
- 1 tablespoon fresh chopped parsley
- salt and pepper
- Remove the stems from the mushrooms and finely chop the stems.
- Heat the oil in a large skillet over medium-high heat.
- Add the sausage, chopped mushrooms stems, and garlic – cook until the sausage is browned then remove from the heat.
- Preheat the oven to 350°F.
- Stir together the cream cheese, ¼ cup parmesan, and parsley in a medium bowl.
- Add the sausage mixture to the bowl and stir well – season with salt and pepper.
- Spoon the mixture into the mushroom caps and place them on a baking sheet.
- Bake for 30 minutes then sprinkle with the remaining parmesan.
- Broil on high heat for 3 to 5 minutes until the parmesan is browned. Rest 10 minutes before serving.
