- 1 tablespoon olive oil
- 2 pounds ground beef (80% lean)
- 1 small yellow onion (chopped)
- 3 cloves minced garlic
- 4 cups beef broth
- 1 (15-ounce) can pumpkin puree
- 1 teaspoon dried oregano
- 10 ounces fresh spinach (chopped)
- 1 1/2 cups shredded mozzarella cheese
- salt and pepper
- Heat the oil in a large stockpot over medium heat.
- Add the ground beef, onion, and garlic and cook until the beef is browned, breaking it up with a wooden spoon.
- Stir in the beef broth, pumpkin, and spices then bring to a boil.
- Reduce heat and simmer, covered, for 20 minutes.
- Stir in the spinach and simmer for another 10 minutes then adjust seasoning to taste.
- Spoon into bowls and top with shredded mozzarella to serve.
