Ingredients
  • 1/2 cup peanut butter
  • 1 tablespoon fresh minced ginger
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon fish sauce
  • 1 tablespoon fresh lime juice
  • 2 tablespoons water
  • 2 tablespoons So Nourished granulated erythritol
  • 6 bone-in chicken thighs with skin on
  • 1 tablespoon olive oil
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne
  • salt and pepper
  • 6 cups shredded green cabbage
Instructions
  1. Whisk together the peanut butter, ginger, garlic, rice wine vinegar, fish sauce, and lime juice in a medium bowl.
  2. Add the water and granular erythritol then whisk smooth and set aside.
  3. Rub the chicken with olive oil then season with ground coriander, cayenne, salt, and pepper.
  4. Preheat the grill to medium heat and grease the grates with oil.
  5. Place the chicken on the grill skin-side down and cook for about 6 minutes.
  6. Turn the chicken and cook 6 to 8 minutes more until cooked through.
  7. Meanwhile, toss the cabbage with the peanut sauce until well coated.
  8. Serve the chicken hot over a bed of shredded cabbage with the peanut sauce.
