Now, when you pick out a peanut butter at the store, you need to be extra careful to purchase one that is just made with peanuts, no extra sugars added, no corn syrup, just peanuts. Luckily, there are many pure peanut-peanut butters on the market so this shouldn’t be a difficult search!
Added to that pure peanut butter is ginger and garlic, two powerful spices that pack a serious punch. Be sure to use fresh ginger and fresh garlic in order to get the most flavor possible. When fresh, ginger, and garlic both have a spicy tang that is what truly sets this sauce apart from any store-bought version.
Rice wine vinegar, fish sauce, and lime juice are the remaining flavor enhancers that we should definitely talk about. Rice wine vinegar adds a subtle taste of wine while giving it that salad dressing bite. Fish sauce adds a whole new level of flavor. Fish sauce is savory and has an earthy, umami taste. - 1/2 cup peanut butter
- 1 tablespoon fresh minced ginger
- 2 tablespoons rice wine vinegar
- 1 tablespoon fish sauce
- 1 tablespoon fresh lime juice
- 2 tablespoons water
- 2 tablespoons So Nourished granulated erythritol
- 6 bone-in chicken thighs with skin on
- 1 tablespoon olive oil
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne
- salt and pepper
- 6 cups shredded green cabbage
- Whisk together the peanut butter, ginger, garlic, rice wine vinegar, fish sauce, and lime juice in a medium bowl.
- Add the water and granular erythritol then whisk smooth and set aside.
- Rub the chicken with olive oil then season with ground coriander, cayenne, salt, and pepper.
- Preheat the grill to medium heat and grease the grates with oil.
- Place the chicken on the grill skin-side down and cook for about 6 minutes.
- Turn the chicken and cook 6 to 8 minutes more until cooked through.
- Meanwhile, toss the cabbage with the peanut sauce until well coated.
- Serve the chicken hot over a bed of shredded cabbage with the peanut sauce.
