Perfect Cinnamon Sugar Bars
Making a low carb baked good can be a challenge. Coconut flour and almond flour, the two most common keto flours out there, do not contain any gluten. Gluten is the compound that is responsible for binding baked goods together, giving them structure and a soft fluffy texture. So, when you start baking with ingredients that do not contain gluten, you may need to give a few keto tips and tricks a try in order to get the baked goods that you want! Here is a little information about ways to bake with these unconventional flours and get amazing results. In addition, this recipe for cinnamon brown sugar bars is going to blow you away!
Powdered gelatin is one ingredient you may see often in keto baking recipes. When you think of gelatin, you may automatically think of regular old jiggly jello! How will that translate into a cake-like bar?! Easy! Just as gelatin makes your jello dessert jiggle, it will bind the ingredients in your baked goods, holding them together and giving them a soft yet strong texture. A little bit of powdered gelatin added to a recipe made sans gluten will have a huge, positive impact! Look for unflavored gelatin that is made from beef bones to get the biggest health benefits as well (however, especially when baking, any plain gelatin will work wonderfully- you don’t want to have a beefy taste in your bars!).
You may also want to give xanthan gum a try when baking low carb recipes. Much like powdered gelatin, xanthan gum adds structure to the batter as it bakes, acting in a similar manner as gluten. Xanthan gum is completely flavorless and a little bit goes a long way toward making a perfectly textured, keto, and gluten-free baked good. You will see xanthan gum in many keto recipes for this reason. One other ingredient worth noting in this recipe is the So Nourished GOLD which is a brown sugar-like sweetener. Opting for a brown sugar sweetener rather than white sugar will give your bars so much more flavor. The golden erythritol is full of rich, sweet notes that you will taste in every bite you take of these bars so definitely go GOLD- you will be happy you did! It works great in place of any granular erythritol, adding more complex flavors while still being low carb and deliciously sweet. - 2 cups almond flour
- 1 tbsp unflavored gelatin powder
- 1 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/2 tsp xanthan gum
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2/3 cup So Nourished GOLD
- 1 egg
- 1 tsp vanilla extract
- 2 ounces cream cheese softened
- 1 tbsp butter
- 1/4 cup So Nourished GOLD
- 1/4 tsp ground cinnamon
- Grease an eight by eight inch square baking pan with cooking spray and set aside.
- Preheat your oven to 325 degrees F.
- In a large bowl, beat the butter and golden erythritol until light and fluffy.
- Add the egg and vanilla extract to the butter mix and combine thoroughly, scraping down the sides of the bowl as needed to fully incorporate all the ingredients.
- Add the almond flour, gelatin powder, cinnamon, xanthan gum, nutmeg, sea salt and baking soda to the bowl and mix until the batter is smooth.
- Spread the batter evenly in the prepared pan and then place in the preheated oven.
- Bake for about 20 minutes or until the top of the bars are golden brown.
- Remove from the oven and cool in the pan.
- Beat the cream cheese and remaining 1 Tbsp of butter with the golden erythritol and cinnamon until light and fluffy.
- Spread the icing over the top of the cooled bars and then slice and enjoy!
