Creamy Berry Mousse

Berries are one of the sweet luxuries that you can enjoy on a keto diet. Not only do they add amazing, bright flavor to desserts but they are also nice and sweet on their own, without any added sugars required! This recipe takes advantage of the delicious taste of fresh berries and blends it with a creamy mascarpone cheese, making a perfect combination that you are sure to love.

If you have never used mascarpone cheese, get ready to discover an ingredient that is sure to be a new favorite. Mascarpone is an Italian double or triple cream cheese that is smooth and very rich. It is softer than cream cheese and actually has a sweet flavor all of its own. It is most popularly used Tiramisu and other desserts, however, you can definitely utilize this delicious ingredient in other savory dishes as well. Try adding a scoop to a sauce to give it a creamier texture or toss a few spoonfuls into your morning smoothie to instantly give it a “cheesecake”-like taste.

Low Carb Berry Mascarpone Mousse

Mascarpone actually has about twice the fat when compared to cream cheese. That is what gives this ingredient it’s melt in your mouth texture! It is also perfect for a keto diet when you want to increase your fat intake. You can use mascarpone cheese in place of cream cheese in almost any recipe (or vice versa) and get the same ending results. We choose mascarpone for this recipe since its decadent taste goes so well with the fresh tang of the berries!

You may already be familiar with the many benefits of berries but let’s take a look at them one more time so that you know this dessert not only tastes great but it is actually quite healthy. Berries are full of antioxidants that are known to fight free radicals in your body, giving your immune system a boost and even going so far as to fight signs of aging. Berries are also naturally high in fiber, can help lower cholesterol and provide many vitamins and minerals that you need no matter what diet you are on.

Keto Berry Mascarpone Mousse

Our recipe for berry mascarpone mousse calls for fresh berries but you can definitely substitute frozen berries if needed. Try to use the same quantity of berries as directed so that the macros for this recipe stick to your keto needs. To use frozen berries, thaw the berries and drain most of the juice that comes off the berries as a result of thawing. Fold the berries into the mousse as directed and get ready to enjoy!

If you don't have a mix of berries on hand, you can also make this mousse using just one kind of berry. Use all blueberries for a blueberry and cream type dessert. All strawberries are just as tasty and using all raspberries will give you a mousse that is pure pink perfection. Any combination of keto berries will work so get creative and see which you like best.

We hope you love this amazing mousse just as much as we do. Make it in the summer when berries are in season or in the winter when you want something to remind you of warm days to come. the keto berry mascarpone mousse just tastes good all the time. Any time. Every day.
