Low Carb, Keto Frozen Yogurt
We are big believers that ice cream is a year round dessert. It doesn’t have to be summer to enjoy a big bowl of ice cream! The only restrictions we put on ice cream is centered around the carbs. Ice cream can be enjoyed anytime, anywhere but it has to be low carb. Gotta stick to that keto lifestyle after all!
Sometimes, a full bowl of hearty ice cream just seems like a little too much. Even ice cream can be overwhelming sometimes! That is when we reach for this recipe that makes a perfect bowl of sugar-free vanilla frozen yogurt. Frozen yogurt is a little lighter than ice cream yet still sweet enough to satisfy that sweet, cold craving you may be having. Let us show you how we make this keto frozen yogurt so that you can get started whipping up your own batch to enjoy!
To begin, we infuse the coconut milk with real vanilla flavor. By simmering the coconut milk with the vanilla bean, all the tasty flavor of the vanilla bean is transferred into the milk. There are even pretty little black specks that show the vanilla is there! While real vanilla bean has no substitution, you can use vanilla extract in a pinch. Add one teaspoon of vanilla extract to the coconut milk after it simmers.
Xanthan gum is added to the sweetened vanilla coconut milk and whisked in well. Xanthan gum will help give the frozen yogurt a nice, smooth and flexible texture. Xanthan gum is used a lot in keto baking to bind ingredients so buy a big container- you will use it! You may need to strain the ice cream mix after adding the xanthan gum to get out any lumps. Try not to remove too much of the gum during straining and, if you seem to have strained it all out, sprinkle a little more in the milk. It is an important ingredient!
Let the coconut milk mix cool completely before stirring in the yogurt and the vodka. Our sugar-free frozen yogurt uses real yogurt to give this dessert a good tangy taste. We like to use Greek yogurt as it is super thick and also loaded with probiotics. You can also try using flavored Greek yogurt to switch up the recipe a little. Blueberry, strawberry or even vanilla Greek yogurt will work well. Just make sure there is no added sugar in the yogurt you choose! You don’t want any of those carbs to sneak into the mix.
Vodka is used to help keep the frozen yogurt soft. Without the vodka, the frozen yogurt would freeze very hard and not have that creamy texture you are looking for. A little vodka goes a long way so 1 tbsp is all you need!
Freeze the mix in your ice cream machine, using your manufacturer's directions as a guide. Once churned, place the frozen yogurt in an airtight container and store it in the freezer until you are ready to enjoy. You can also mix in some Lily’s sugar-free chocolate chips or some fresh berries if you’d like. The possibilities are endless!

- 1 vanilla bean
- 1 can coconut milk (13.5 ounces)
- 2/3 cup So Nourished granular erythritol
- 1/4 tsp salt
- 2 cups plain Greek yogurt
- 1 tbsp vodka
- 1/4 tsp xanthan gum
- Place the coconut milk, erythritol and salt in a small saucepan.
- Cut the vanilla bean in half and scrape out the seeds with the back of a knife, adding the seeds to the pot with the milk. Add the scraped vanilla bean pod to the pot as well.
- Bring the milk to a simmer and simmer over low heat for 10 minutes.
- Remove the vanilla bean pod from the milk and discard.
- Sprinkle the xanthan gum over the hot milk and whisk in. Make sure there are no lumps
- Strain the milk mix into a large bowl (straining will help remove and stray lumps as well!).
- Cover the mix with a piece of plastic wrap, placing the plastic directly on top of the milk mix. Place the bowl in the fridge to cool completely.
- Once cooled, remove the bowl from the fridge and stir in the yogurt and vodka, mixing until smooth.
- Churn the frozen yogurt in your ice cream machine according to your machine's directions (about 20 minutes to freeze on average).
- Once churned, transfer the frozen yogurt to an airtight, freezer safe container, cover and freeze for 4-5 hours or until firm.
- Scoop and serve!
