Easy Keto Granola Bars
When it comes to baking, I am a big fan of anything that is easy. The easier, the better. While I wish I had hours to spend in the kitchen, I realistically do not. But that doesn’t mean I don’t want fresh baked goods! So, quick and simple recipes are always my go-to.
I also enjoy having easy, healthy snack options on hand. Anyone who gets hangry (hungry angry) can probably relate! It is important to be able to quickly grab a snack and satisfy any pang of hunger immediately. However, this isn’t always easy to do when you are following a low carb diet. Lots of snack foods are packed with carbs especially the more convenient snacks. Granola bars, for instance, are often filled with oats, sugars, and dried fruits that are not keto-approved. So, it can be up to you to make your own on-the-go snacks.
Speaking of granola bars, wouldn’t it be great if there was a simple, low carb granola bar hat also tasted pretty darn good? Well, there is! When I think about easy baking and easy snacking, I automatically think about granola bars. They are actually pretty simple to make when you have the right ingredients. They are also one of those foods that may seem complicated at first, but after you make the recipe once, you are a total pro. That is how you will feel about this low carb maple granola bar recipe. It may seem tricky, but it is actually incredibly easy.
The first thing to notice is that this recipe only has 5 ingredients. How simple is that! They are also 5 ingredients that I strongly recommend you always have on hand anyway. You can always find a way to use keto pancake syrup, So Nourished GOLD sweetener, and low carb chocolate chips. If you haven’t tried So Nourished Maple Pecan Granola yet, you definitely should. It is sweet, nutty, and completely keto. It is a great snack all on its own! But if you want something that a little easier to take with you, go for this full granola recipe.
The granola bars are held together with a thick, keto caramel sauce. To make the sticky sauce, we boil the butter, pancake syrup, and golden erythritol. After about 8 minutes, the mix gets thick and turns a deep brown- that means the sauce is done! The caramel is poured over the granola and mixed together. Then, add in the chocolate chips and give it a quick stir. You can skip the chocolate chips if you don’t have them or just want a more simple snack.
The granola bar mix is then pressed into a pan and baked to make them nice and crunchy. You can cut the cooled bars into any shape you’d like, making bigger or smaller keto snack bars depending on your preferences. I know I like a bigger bar since I am a big snacker!
It’s a pretty easy recipe, right? Just boil, mix and bake! Perfect keto granola bars are a great snack, dessert, or even breakfast. Make a big batch and freeze a few so when that low carb hunger hits, you are ready to kick it to the curb! Enjoy.

- 1/2 cup butter
- 4 tbsp So Nourished Pancake Syrup
- 2 tbsp So Nourished GOLD
- 3 cups So Nourished Maple Pecan Granola
- 1/2 cup Lily's Chocolate Chips
- Preheat your oven to 350 degrees F and line a 9x9 baking pan with parchment paper.
- Place the butter, pancake syrup and So Nourished GOLD in a small saucepan and bring to a boil over medium heat. Stir occasionally to prevent the mix from burning.
- Cook the mix for about 8 minutes to thicken into a golden caramel sauce.
- Place the Maple Pecan Granola and chocolate chips in a large bowl then pour the hot caramel over the granola and stir quickly.
- Once mixed, pour the coated granola into the prepared ban. Press the mix into the pan firmly, using the back of a spatula to really pack the granola well.
- Bake the granola bars in the preheated oven for about 25 minutes. Remove from the oven and cool completely.
- Cut the bars into 10 pieces and enjoy!
