A family affair

Amanda Orso, the founder of Barely Bread, decided to go low-carb to follow the advice of her personal trainer. A lifelong advocate for wellness and health, Orso nonetheless quickly ran into an issue with her new diet: her Italian husband.

“Everybody loves bread and it is in every home, but you’re not going to find a doctor or nutritionist that will ever say ‘Eat more bread,'” Orso confessed. “So I gave up bread, but my husband is 100% Italian. Having bread in the house is a big deal.”

With a family hungry for carbo-loaded Italian favorites, Orso set out to hone her skills as a baker and develop recipes that would both fit her diet as well as her cravings for carbohydrates. The product was Barely Bread, a line of frozen bread, bagels, and baguettes that use alternative ingredients like almond and coconut flour to retain the texture of everyone's favorite bread products without the high carb count.

A new career

When Orso began fiddling with recipes to please her family, she had no idea that she would be beginning on a whole new career. However, after seeing how much her family enjoyed her creations and noticing a distinct lack of low-carb bread substitutes on the market, Orso decided to leave her position at a New York-based company to bring Barely Bread to the world.

Barely Bread's inception is far from the first time that Orso has adjusted recipes to suit her dietary needs. After growing up with an allergy to dairy on her parent's dairy farm, Orso quickly became a professional at creating custom recipes and finding substitutions that work for her.

“My dad actually hates when I say this, but I actually have a dairy allergy and I grew up on a dairy farm. So I’d become very used to tweaking recipes and playing around. I started applying the same tactics to bread,” said Orso.
