Rebecca Moore, who goes by the name “Becky,” owns the Mudcat Coffeehouse in Oak Ridge, Missouri.1 The restaurant has a classic menu that includes things like BLTs, homemade cakes, fried fish, and various coffee options. Rebecca LaClair is not only a regular diner at Mudcat Coffeehouse, but she also happens to be a local food critic. LeClair was diagnosed with diabetes in early 2019 and was forced to change her eating habits. Her body needed her to alter them to focus on foods that are low-carb/keto-friendly. Unfortunately, this also meant not being able to order her favorite dishes at the restaurant.

How Moore was inspired

Because LeClair was a regular, she and Moore had a friendly relationship. Once the owner heard the news that her favorite customer wouldn’t be able to enjoy the Mudcat Coffeehouse as she used to, she took action. Moore immediately made a low-carb meal of a delicious bun-free beef burger with bacon, cheese, tomatoes, and a mystery sauce; it was tasty and keto-friendly! For Moore, a genuine food lover with a passion for coming up with new recipes, the challenge to add a keto-friendly food to her menu was something she was excited about.

The menu re-imagined

Popular menu items started to have keto-friendly alternatives, such as freshly-fried pork rinds topped with house-made pulled pork and cheese. The “nachos” are low-carb friendly and have chicken and veggie options. LeClair raves about the delicious foods. Moore's keto-friendly menu can easily be recreated at home by picking up some popular keto ingredients. You don't have to run out to Missouri to have delicious keto versions of your favorite foods, but it's great that restaurants are including these menu items!
