Homemade Chocolate Low Carb Cereal
When I first started following a keto diet, I immediately missed cereal. Pouring a bowl of cereal in the morning is just so easy. You don’t need to cook, you don’t need to even think- just pour and eat. The simplicity of cereal was lacking in my morning routine.
I decided that having a keto-friendly cereal on hand was imperative. I needed to be able to wake up from a deep sleep and mindlessly pour a bowl of cereal to start my day. So, I set out to try some low-carb cereals from the grocery store. Let me tell you, they are not the same.
Most keto cereals sold in the grocery store are quite bland. They have almost no flavor and can taste almost stale. These packaged cereals were just not good. So, what is a keto follower to do?! Creat their own cereal of course!
I found a few different low-carb cereal recipes online and gave them a try. Some were good, others were just okay and some were terrible. I decided to take the recipes that were the best and tweak them to create my perfect, keto cereal. This recipe here is the result of months of playing around with keto cereal recipes.
The base of the keto cereal is almond flour. I am a big fan of almond flour for a few reasons. First, it always bakes nicely. Almond flour is nice and fluffy like regular, wheat flour but without all the carbs. Rather than be loaded with carbs, almond flour has lots of healthy fats. Fats are a keto dieter's best friend! Pile on the almond flour, because it makes a wonderful base for keto cereal.
I am a true chocolate lover. This can be tricky on a keto diet since most chocolate has lots of carbs, too. So any chance I get to make a low-carb chocolate food, I take it. I added unsweetened cocoa powder to the cereal mix so that I could have my chocolate fix right at the beginning of the day. What’s better than starting your morning with a big bowl of chocolate?! With all the delicious chocolate flavor, this cereal even makes a great dessert! Yes, chocolate keto cereal is a necessity in my book.
Most cereals you buy in the store are packed with sugar. That is why they taste so good. That sweetness is irresistible. My chocolate keto cereal is just as sweet, just as tasty but with none of the carbs. I use So Nourished granular erythritol to sweeten the cereal. It is an all-natural sweetener and probably the best keto sweetener I have tried. There is none of that metallic aftertaste that some artificial sugars have. Erythritol makes my keto chocolate cereal perfect.
Once the dough has come together and the cereal has been rolled super thin, it is scored and baked. The cereal is done when the edges of each square begin to get a little dark. You don’t want to overbake the keto cereal or it can taste a little biter. Once the browning starts, it's time to take it out of the oven!
Store the low-carb cereal in an airtight container for up to two weeks. Anytime you crave a bowl of easy, delicious cereal in the morning, just pour and enjoy! Chocolate keto cereal really is a low-carb diet game changer. It brings back the ease of breakfast. I hope you love it!
Servings: servings |
- 2 cups almond flour
- 1/3 cup unsweetened cocoa powder
- 1/3 cup So Nourished granular erythritol
- 1/4 tsp salt
- 1/4 tsp ground cinnamon
- 1 egg
- 3 tbsp melted butter
- 1/2 tsp vanilla extract
- Preheat your oven to 300 degrees F
- In a large bowl, whisk together the almond flour, cocoa powder, erythritol, baking powder, salt and cinnamon.
- Mix the egg, butter and vanilla into the dries and stir to make a thick dough
- Scoop the dough onto a piece of parchment paper and top with the second piece of parchment paper. Use a rolling pin to roll the dough between the two pieces of paper. Roll it as thinly as possible. Try to make the dough about 1/8 of an inch thick
- Gently peel off the top piece of parchment. Use a sharp knife or pizza cutter to cut the thin dough into small ½ inch squares. You can leave the scored dough on the parchment paper, no need to divide the squares just yet
- Gently lift the parchment paper with the scored dough onto a flat sheet tray
- Bake the cereal in the preheated oven for 25 minutes. Remove the tray and let the cereal cool completely
- Break the baked dough into squares. The cereal should easily fall apart thanks to the cuts you made before baking
- Scoop some chocolate cereal into a bowl and enjoy with your favorite milk
