Easy, Low Carb Chocolate Cake

You will go crazy for more after just one bite. It’s almost guaranteed.
When I first started the keto diet, I thought that was the end of my chocolate cake days. However, I was very wrong. You definitely can enjoy chocolate cake and stick to a low carb lifestyle. All you need are the right ingredients and a good recipe. This keto chocolate cake recipe will check your boxes for sure. It is rich, decadent and loaded with amazing chocolate flavor. On top of that, it is very easy to make. It only takes ten minutes, maximum, to make the batter and get the cake into the oven. Surprised? I know, it is hard to believe! But it’s true!
To make my keto chocolate cake recipe, you just need a big bowl and a whisk. You can use a stand mixer fitter with a whisk attachment or just a bowl with a hand whisk. The almond flour, cocoa powder, baking powder and salt are all mixed together. Then, the whole milk, eggs, So Nourished Granular Erythritol, vanilla and coffee are whisked in as well. Keep whisking until a smooth batter forms. You don’t want any lumps in your cake batter so keep whisking until they disappear.
Once the batter is nice and smooth, stir in some Lily’s dark chocolate chips. Adding chocolate chips to the cake batter will really make the keto chocolate cake even more delicious. However, you can skip the chips if you don’t have them on hand or if you are just looking for a more simple recipe. If you do opt to use dark chocolate chips in the chocolate cake, I recommend Lily’s chips. They are low carb, taste great and bake just like classic chocolate chips. I always have a bag or two on hand in case I need to make emergency chocolate chip cookies or this keto chocolate cake recipe.
I bake my low carb chocolate cake batter in one 8 inch round cake pan. You can use two smaller six inch cake pans and make two layers of chocolate cake. Once they bake, you can sandwich the smaller cakes together with some keto frosting. I especially love cream cheese frosting with this cake. The tangy cream cheese compliments the rich chocolate well. Of course, you can use any kind of frosting you’d like! Just make sure it is low carb!
If you want to turn this amazing keto chocolate cake recipe into cupcakes, you can certainly do that too. Instead of pouring the batter into a cake pan, scoop it into a cupcake tray lined with paper cupcake liners. Fill each cupcake liner up about ½ of the way to the top. The cake will rise as it bakes and fill the liner completely. Frost the cupcakes any way you’d like. I’m not sure if I like this recipe as cake or cupcakes better… it’s a tough choice!

- 1 1/2 cups almond flour
- 1/3 cup unsweetened cocoa powder
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup whole milk
- 3 eggs
- 1/3 cup So Nourished granular erythritol
- 2 tsp vanilla extract
- 1/4 cup brewed coffee (cold)
- 1/2 cup Lily's dark chocolate chips
- Preheat your oven to 350 degrees F and grease an 8 inch round cake pan. Set the pan aside.
- Whisk the dry ingredients together in a large bowl.
- Add the milk, eggs, erythritol, vanilla and brewed coffee to the bowl and whisk to make a thick batter.
- Stir in the chocolate chips.
- Pour the batter into the prepared cake pan and bake for 20 minutes.
- Let the cake cool in the pan then flip upside down to remove. Ice with your favorite keto frosting.
