Rich Low Carb Chocolate Milk Recipe
When I first started following a keto diet years ago, I immediately gave up a lot of my favorite foods. Many of the things I loved were now off-limits like a big bowl of mac and cheese or a burger with French fries. At first, this was very hard. It is tough to go from eating whatever you want to having to watch the carb count at every meal! I am sure you can relate.
However, after learning more about the keto diet and figuring out how to cook in a low-carb way, I was able to re-think a lot of my favorite foods. If I want a bowl of mac and cheese, I can still make an amazing cheese sauce and pour it over a bowl of zucchini noodles or Miracle noodles which are totally carb-free. If I want that burger and fries, I just make zucchini fries and use my own keto ketchup to dip them in.
The keto diet can include all of your favorite foods, they just may have to be made in a different way. Take chocolate milk for example. This nostalgic dessert seems like something that you wouldn’t be able to have when on a tight keto diet. But you definitely can! You can enjoy a big glass of low carb chocolate milk whenever you’d like. Here is my perfect keto chocolate milk recipe that will satisfy any chocolate milk cravings you may have.
First, pick out your favorite milk option. I love almond milk and always have a container on hand. You can use unsweetened coconut milk or just pure whole milk if you’d like. This part is totally up to you! My chocolate milk recipe is mostly almond milk with a splash of whole milk to make it nice and creamy.
Unsweetened cocoa powder is the next ingredient you need. Make sure to use unsweetened cocoa and not a hot cocoa powder mix. Pre-mixed hot cocoa powder is already sweetened, usually with sugar. Not good! Unsweetened cocoa powder can be found in the baking aisle of the grocery store. Don’t be afraid to splurge on the high-end brand as a strong, chocolate flavor is necessary. In my experience, the store brand of cocoa powder can be a little light.
Next, you need so So Nourished powdered erythritol to sweeten your milk. The powdered erythritol will blend right into your chocolate milk, dissolving almost instantly. You don’t want a gritty drink! I love using erythritol in this recipe because it is perfectly sweet with no bad after-taste. It really is my favorite keto sweetener in general.
A little vanilla extract and a tiny bit of salt brings out the flavor of the chocolate and completes this low-carb chocolate milk recipe. Now, take the 5 minutes to go stir together all the ingredients and make yourself a big glass of chocolate milk. Enjoy a cup every day. - 1 1/2 cups almond milk
- 1/2 cup whole milk
- 2 tbsp unsweetened cooca powder
- 2 tsp vanilla extract
- 1 pinch salt
- 1/4 cup So Nourished powdered erythritol
- Place all of the ingredients into a blender and puree to mix.
- Pour into two glasses and enjoy cold. Add ice if desired.
