Easy Low Carb Ice Cream Recipe
Have you been craving ice cream lately? I know I have! Summer is here and that also means that ice cream is the number one dessert on the menu. A nice cold ice cream at the end of a long hot day….what could be better? Well, homemade ice cream would probably be better. And if that homemade ice cream was also keto-friendly, that would be a total win. Lucky for you that we have an amazing keto mason jar ice cream recipe that we would love to share!
Making ice cream may seem like a daunting task. Most recipes require you to cook eggs and cream to a specific temperature and then whisk in sugar, cool the whole mix, and then use an ice cream machine to churn the whole mix. Now, I know that not everyone has a bulky ice cream machine just sitting around in their kitchen. I also know that most people who are reading this post are trying to follow a low carb diet so that means using sugar is out of the question. So how can you make ice cream without an ice cream machine or sugar? Easy! All you need is a mason jar.
Our recipe uses the simple mason jar to mix our ice cream recipe to perfection. The jar also serves as the perfect freezer-safe container for storing the ice cream as it chills to the ideal texture. We know that most of you already have a mason jar on hand (they are pretty trendy!) but, if you don’t, you can grab one at the store for just a dollar or two- way less than buying a big ice cream machine!
To make the keto mason jar ice cream, all you need to do is measure and add all of the ingredients in the recipe into your quart-sized mason jar. Screw on the lid and then shake! Shake the jar for about 6 minutes or until the ingredients inside the jar have fluffed to double their original size. This increase in volume is thanks to your vigorous shaking which causes the heavy whipping cream to get infused with air. The mix becomes light and fluffy which is exactly what you want. Did you know that air makes up between 30% and 50% of the total volume of commercial ice cream? You need that air! So keep shaking until you double the contents in your mason jar.
Once the ice cream mix is fluffed, simply put the jar in your freezer and wait for it to get firm. This takes about 4-6 hours but the longer the ice cream freezes, the better the texture will be. Once frozen, you can unscrew the lid on your mason jar and eat your homemade, keto ice cream straight out of the jar! Making ice cream really doesn’t get any easier than that! And did we mention that this ice cream recipe is not only easy but also incredibly delicious? Because it definitely is! You will never have to buy low carb ice cream again- just take 10 minutes out of your day and make your own! Enjoy!

- 1 cup heavy cream
- 2 tbsp So Nourished granular erythritol
- 1/8 tsp sea salt
- 1 tbsp unsweetened cocoa powder
- 1/8 tsp cinnamon
- 1 1/2 tsp vanilla extract
- 2 tbsp Lily's dark chocolate chips
- Place all the ingredients in a large, quart sized mason jar. Screw on the top tightly.
- Shake the mason jar vigorously for about 5-8 minutes or until the contents of the jar has doubled in volume.
- Place the jar in the freezer and freeze for about 4 hours or up to 24 hours.
- Scoop and serve!
