- 6 large eggs whisked
- 2 tablespoons heavy cream
- salt and pepper
- 1 teaspoon butter
- 1 tablespoon fresh chopped chives
- 18 slices uncooked bacon
- 2 cups shredded cheddar-jack cheese
- Beat the eggs together with the heavy cream, salt, and pepper.
- Heat the butter in a large nonstick skillet over medium heat.
- Add the egg mixture and cook for 3 minutes, stirring often, until just set.
- Stir in the chives then set aside.
- Lay out three pieces of bacon on a cutting board and sprinkle the bottom third with cheese.
- Place a spoonful of the eggs on top of the cheese and roll up the bacon around the fillings.
- Repeat with the remaining ingredients until you have six roll-ups.
- Place three of the roll-ups in a large skillet over medium-high heat until the bacon is crisp.
- Remove to paper towels and repeat with the remaining roll-ups. Serve hot.
