- 4 ounces uncooked bacon chopped
- 1 cup fresh chopped spinach
- 8 large eggs
- 2 large egg yolks
- 1/4 cup butter
- 1/2 tablespoon fresh lemon juice
- Pinch paprika
- salt and pepper
- Preheat the oven to 400°F.
- Place the bacon in a large skillet and heat it over medium heat.
- Cook until the bacon is crisp, about 7 to 8 minutes until the fat has rendered.
- Stir in the spinach and cook until wilted, about 1 to 2 minutes.
- Spoon the vegetable mixture into four ramekins.
- Crack two eggs into each ramekin and season with salt and pepper.
- Place the ramekins on a baking sheet and bake for 10 to 12 minutes until the egg whites are set.
- Meanwhile, prepare the hollandaise sauce by combining the egg yolks, lemon juice, and paprika with a pinch of salt in a blender
- Blend until smooth then blend on low speed while drizzling in the butter.
