- 1/2 medium head cauliflower chopped
- 1/2 cup almond flour
- 2 large eggs whisked
- 3/4 teaspoons ground turmeric
- 2 tablespoons olive oil mayonnaise
- 4 slices cooked bacon halved
- 2 lettuce leaves
- 2 thick sliced tomatoes
- salt and pepper
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Place the cauliflower in a food processor and pulse into rice-like grains then add to a bowl.
- Stir in the almond flour, eggs, turmeric, salt, and pepper.
- Spoon the mixture onto the baking sheet using a 1/3 cup and flatten into discs.
- Bake for 20 minutes until firm and dry then remove from the oven.
- Spread the mayonnaise on the buns in an even layer.
