Perfect Keto Coffee Cake

This is an ingredient you don’t see to often in traditional baking but when you bake low carb, using alternative flours and sugars, it can be quite useful. Xanthan gum is a food thickener and stabilizer made from a bacteria found in plants. It doesn’t have any flavor and it also has almost no health benefits. Think of it as a neutral ingredient that will simply help your baked goods come out fantastically.
When used in baking, xanthan gum acts as a binder, holding the food together. This is necessary when there is no gluten in a baked good, for example, no all-purpose flour which will bind the batter and baked good. Without a binder, the final product would crumble apart, leaving you with a mini mess instead of a nice slice of coffee cake! A tiny bit of xanthan gum will give your baked goods the consistency that you want and make your low carb baking more comparable to “traditional” baked goods.
Now that we went over the little details of the recipe, let's talk about just how good this coffee cake tastes! - 8 tbsp butter, softened
- 1/2 cup So Nourished GOLD
- 2 eggs
- 1 cup sour cream
- 1 tsp almond extract
- 2 cups almond flour
- 1/2 cup coconut flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp xanthan gum
- 1/2 tsp ground cinnamon
- 2 cups almond flour
- 1/4 cup So Nourished GOLD
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp salt
- 8 tbsp melted butter
- Grease a 9x9 inch square baking pan with baking spray or butter and set aside.
- Preheat your oven to 350 degrees F
- In a large mixing bowl, beat the butter and golden erythritol together until fluffy, scraping down the bowl several times to incorporate all the butter.
- Add the sour cream, almond extract and eggs and mix well.
- Add the almond flour, coconut flour, baking powder, baking soda, xanthan gum and ground cinnamon to the bowl and beat slowly to make a smooth batter. Set the batter aside.
- In a separate bowl, combine all the ingredients for the topping and mix until crumbly. Use your hands to really blend the ingredients well.
- Spread half of the prepared batter in the greases cake pan then sprinkle with half of the crumble mixture.
- Spread the remaining batter in the pan and top with the rest of the crumble.
- Bake the coffee cake in the preheated oven for about 30-35 minutes or until the topping is golden brown and a toothpick inserted in the center comes out cleanly.
