Once you have your cauliflower rice all ready, the rest of this waffle recipe comes together in just a few minutes. After making the rice, mix in the eggs and cheese to create a batter. - 1 1/2 cups cauliflower rice
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 7 large eggs (divided)
- 1/4 cup fresh chopped chives
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 tablespoons butter
- Place chopped cauliflower in a food processor and pulse into rice-like grains – measure out 1 ½ cups.
- Add the cheeses, 3 eggs, and the seasonings and pulse until the mixture comes together.
- Grease and preheat a waffle iron then spread half the mixture in it and close to cook.
- Cook until the waffle is cooked and crisp, about 8 to 10 minutes, then remove to a plate.
- Repeat with the remaining batter while you fry the eggs.
- Melt the butter in a large skillet over medium-high heat and crack the remaining eggs into it.
- Fry the eggs to your liking then serve on the waffles.
