Incredible, Low Carb Cinnamon Roll Pancakes
This year needs to be better than the last. We all need to make sure that 2021 is nothing like 2020. Of course, one thing that 2020 may have taught us is the importance of self-care. One thing you may choose is to give the keto lifestyle a try. Keto dieting and low carb eating has been shown to help you lose weight, lower the risk of heart disease, lower blood sugar, and improve cholesterol levels. Sounds pretty great right? Well, it is!

Let me show you one of my favorite keto recipes and how simple and delicious this diet really is.
I bet that when you hear “cinnamon roll pancakes”, you automatically think of something super sugary and full of carbs. Not in this case! Our cinnamon roll pancake recipe is totally keto-friendly and an amazing way to start your day. I know that I would gladly get out of bed for a cinnamon roll pancake smothered in cream cheese frosting.
To make this recipe low carb, choosing a good keto sweetener is key. This recipe features So Nourished Powdered erythritol. Erythritol is a sugar alcohol that is naturally derived from fruits and plants. It passes right through your body so the calories and carbs in the sweetener are not absorbed. You get a wonderful tasting sweetener without any of the carbs. Your blood sugar levels will also stay the same as the sweeter making it perfect for diabetics as well.
The powdered version of erythritol is great in recipes since it dissolves almost instantly. There is no grainy texture left behind. We blend cream cheese, powdered erythritol, and a little coconut milk to make a smooth frosting to top these cinnamon roll pancakes. It really is irresistible.
So Nourished Powdered erythritol is also mixed into the cinnamon swirl that gives the pancakes their signature flavor and appearance. The cinnamon mix is spiraled into the pancake batter to make a breakfast that is almost too pretty to eat.

- 1/2 cup almond flour
- 1/2 cup cream cheese
- 4 eggs
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1/4 cup melted butter
- 1 tsp cinnamon
- 2 tbsp So Nourished powdered erythritol
- 1/4 cup cream cheese
- 2 tbsp So Nourished powdered erythritol
- 1 1/2 tbsp unsweetened coconut milk
- Start by making the cream cheese frosting. Beat all of the ingredients for the frosting together until smooth. Set aside for now.
- Place all of the ingredients for the pancake batter in a blender and blend until smooth.
- In a small bowl, stir together all of the ingredients for the cinnamon swirl. Place the mix into a small pastry bag.
- Heat a skillet over medium heat and grease with a little butter, coconut oil or baking spray.
- Scoop about three tablespoons of pancake batter into the hot pan then pipe a spiral of the cinnamon swirl mix directly into the batter. If you do not have a piping bag, simply use a spoon to scoop about a tablespoon of the cinnamon swirl mix onto the pancake.
- Let the pancake cook for about 2 minutes then flip and cook for another minute to make both sides golden brown.
- Cook the remaining pancake batter the same way, spiraling the cinnamon mix into the batter to make a beautiful cinnamon swirl pancake.
- Top the pancake with about 1 tbsp of the frosting and enjoy while hot!
