Keto Waffle Recipe with Coconut Flour

There is nothing quite as delicious as enjoying a warm, delicious waffle when you wake up in the morning. A breakfast that has fresh, homemade waffles just screams of luxury and also comfort. With this perfect coconut flour waffle recipe, you can still have that luxurious breakfast while also sticking to your low carb diet. You don’t have to give up waffles just because you have gone keto- all you need is this recipe in your hand and you are ready to go!

The trick to making waffles into a low carb food is to eliminate the all-purpose white flour that most homemade waffle recipes use. All-purpose flour is made from ground wheat and contains lots of carbohydrates- not something you can have when on a low carb or keto diet. Luckily, there are lots of great flour substitutes that you can turn to. From almond flour to coconut flour, flaxseed flour to buckwheat flour, you have a lot of options! For our waffle recipe, we chose to use coconut flour, and here is why.

Low Carb Coconut Flour Waffles

Coconut flour is a very light, white flour that is made using the pulp of the coconut. Coconut flour is actually a byproduct that is made during the production of coconut milk. To make coconut milk, the meat of the coconut is soaked, creating coconut milk. When the milk is drained from the coconut meat, the leftover pulp is dried and then ground into coconut flour. Pretty cool, right?!

So coconut flour is completely, 100% pure coconut, giving it a great tropical taste and also a fantastic, low carb flour that you can use in almost any baking recipe. Coconut flour does act a little differently in recipes than regular white all-purpose flour. For one, it makes baked goods much denser. When coconut flour bakes, the proteins coagulate and get tough which can lead to a chewier end result. For this reason, it is always good to use less flour than you would if you were just using all-purpose flour. Many people also like to use half coconut flour and half almond flour in low carb recipes to get a lighter textured baked good.

However, in our coconut flour waffle recipe, we want that chewy texture! Waffles are fantastic when they are a little bit dense and it makes for a much more filling breakfast. We also love the coconut taste that the flour gives these waffles. It goes perfectly with any kind of keto berry and also works well with low carb maple syrups (the So Nourished Maple Flavored Pancake Syrup is ahhhmazing on these waffles!).

As you can see, it is all about the coconut flour in this recipe. A few eggs, some butter, erythritol, salt, baking powder, and vanilla extract and you are ready to make waffles! Ingredients
Instructions
  1. Preheat your waffle iron.
  2. Whisk together the butter and eggs.
  3. Add the dry ingredients to the mix and whisk until smooth.
  4. Let the batter sit for about 5 minutes to thicken. If the batter gets too thick, add a splash of unsweetened almond milk or water to thin it slightly (do not add more than ¼ cup).
  5. Pour about ½ cup-3/4 cup batter into your preheated waffle iron. The amount of batter may vary depending on the size of your waffle iron.
  6. Cook the waffle for about 5 minutes or until golden brown.
  7. Serve while hot with keto maple syrup, a few fresh berries or enjoy on it’s own!
