- 2 1/2 tablespoons So Nourished powdered erythritol
- 3 large eggs whisked
- 1 teaspoon vanilla extract
- 1 teaspoon coconut oil
- 1/2 cup fresh berries
- Pinch salt
- Beat together the cream cheese and powdered erythritol until smooth and creamy.
- Add the eggs, vanilla extract, and salt and beat smooth.
- Heat the coconut oil in a large skillet over medium heat until melted.
- Spoon the batter into the pan, using about ¼ cup per pancake and sprinkle with blueberries
