Keto Granola Recipe
Granola is one of those foods that has so many purposes and uses. It can be a breakfast cereal, enjoyed with some milk poured over the top. Granola can be a nice crunchy addition to yogurt. It makes for a healthy and tasty ice cream topping and it is also great as a snack. You can toss some granola clusters in your mouth in the middle of the day and be full until dinner! Granola is definitely a good food to have in your pantry.
But what can you do when you start a keto diet and you can’t have regular granola anymore? After all, most granola is made with rolled oats which are definitely not part of the keto diet- 1 cup of oats has 55 grams of carbs! With our recipe for grain free granola, you don’t have to worry about those oats any longer- we have completely eliminated all grains from our granola and the result is purely amazing. You will never miss those carb filled grains again!
The main ingredients in our granola are all nuts. Nuts are fantastic to enjoy on a low carb diet as they are naturally lower in carbs and also high in fats. The fat found in nuts is considered to be “good fat” as it is unsaturated. Unsaturated fates have been found to actually lower cholesterol levels. Fat is also an essential part of the keto diet which uses dietary fats as fuel for the body. So we say the more nuts the better! And with this granola recipe, you are definitely getting a great blend of nuts.
While we used almonds, pecans, cashews and hazelnuts to create our granola, you can use more or less of each kind of nut to suit your personal preferences. If you love cashews, use more of those and skip the hazelnuts. It you are a 100% almond person, replace all the nuts in the recipe with almonds. Any kind of nut will work as long as you keep the quantities the same. Keep in mind that switching the nut ratio will affect the carb count! Cashews have almost 5 times more carbs than pecans while almonds fall right in the middle. Maybe mix in a few Brazil nuts which are also one of the lowest carb nuts out there….
Besides nuts, our grain free granola recipe has lots of other healthy ingredients. Chia seeds, flaxseeds, cinnamon and coconut oil are just a few of the things that we have tossed into the mix. To sweeten the granola, we turned to our flavor packed, brown sugar like sweetener- So Nourished GOLD. It adds just the right amount of rich sweetness that you need in a granola. Of course, it also adds zero carbs to the recipe!
All of the ingredients are tossed together and then baked until golden brown, making our grain free granola very easy to make. So make a big batch of this recipe, store it in some mason jars and keep in in your pantry. Next time you need a simple keto breakfast or a fast low carb snack, reach for your granola! You will be happy that you made such a tasty mix!

- 1/2 cup unsweetened coconut flakes
- 2 cups sliced almonds
- 2 cups pecans
- 1/2 cup chopped cashews
- 1/2 cup hazelnuts
- 1/4 cup chia seeds
- 1 Tbsp ground flaxseeds
- 1 tsp ground cinnamon
- 4 Tbsp So Nourished GOLD
- 1/4 tsp salt
- 5 Tbsp melted coconut oil
- 1/4 cup dried blueberries
- Preheat your oven to 325 degrees F and prepare two large, rimmed baking trays with foil.
- In a large bowl, combine the nuts, coconut flakes, chia, ground flaxseeds, cinnamon, So Nourished GOLD and salt. Toss together well.
- Pour the melted coconut oil over the mix and toss again to coat all the ingredients in the oil.
- Spread the granola on the sheet trays so that it is in a flat layer on each tray.
- Bake the granola in the oven for 12 minutes then remove the pans, stir the granola on the tray and then bake for another 12 minutes. The granola should be a nice golden brown.
- Remove from the oven and add in the dried blueberries if using. Let cool completely and then store in an airtight container.
