- 1 teaspoon olive oil
- 1/2 small yellow onion sliced thin
- 1/2 small green pepper cored and sliced
- 1/2 cup sliced mushrooms
- salt and pepper
- 3 ounces sirloin steak sliced thin
- 1 teaspoon butter
- 3 large eggs
- 1 tablespoon heavy cream
- 1 slice provolone cheese
- Heat the oil in a large skillet over medium heat.
- Add the onions, peppers, and mushrooms then season with salt and pepper.
- Sauté the veggies until tender, about 6 to 8 minutes then move to the side of the skillet.
- Add the sliced steak in a single layer and season with salt and pepper.

- Stir everything together then transfer to a bowl.
- Melt the butter in the same skillet and heat over medium heat.
- Beat the eggs with the heavy cream, salt, and pepper then pour into the skillet.

- Let cook for another 30 seconds then place the sliced provolone over one half of the omelet.
- Spoon the steak and veggie mixture over the cheese then fold the omelet in half.
- Cook until the cheese is melted, about 1 minute, then serve hot.
