Instead, the mixture of pulsed cauliflower, chia seeds, and flaxseed replicate a similar texture. You won't even miss the oatmeal!

- 3 ounces chopped cauliflower
- 3 1/2 ounces unsweetened coconut milk
- 1 cup chopped pecans
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 teaspoon maple extract
- 1 teaspoon vanilla extract
- 4 tablespoons So Nourished powdered erythritol
- 1/3 cup chia seeds
- 1/3 cup ground flaxseed
- 12 to 15 drops liquid stevia extract
- 1/4 cup heavy cream
- 3 ounces cream cheese (softened)
- 3 tablespoons butter
- Place the cauliflower in a food processor and pulse into rice-like grains then set aside.
- Warm the coconut milk in a medium saucepan over medium heat.
- In a medium skillet, heat the pecans over low heat until toasted then remove from heat.
- Stir the riced cauliflower into the warm coconut milk and bring to a boil.
- Reduce heat and simmer on low for 2 minutes then stir in the spices, extracts, and the powdered erythritol.
- Stir in the chia seeds, ground flaxseed, and stevia then stir well.
- Whisk in the cream, cream cheese, and butter and cook until thickened.
- Adjust the sweetness to taste then spoon into bowls and serve warm.
