Chocolate Hazelnut Muffins
When you first wake up in the morning, you are probably hungry and in need of some energy. You also probably don’t have much time to create a perfect keto breakfast. Luckily, you can make these amazing Nutella muffins ahead of time, baking them whenever you have time and then enjoying them for the whole week! They are a great, easy keto breakfast that will fill you up, give you the healthy fats you need for energy on the keto diet and taste delicious- it’s the perfect breakfast combination!
While these muffins actually do not contain any “real” Nutella (which is a very high carb spread), it does have all the classic flavors of Nutella that you may be craving. Hazelnuts and chocolate are the main components of Nutella and we have incorporated both of those bold flavors into these muffins in a much healthier and keto-friendly way.
The first main ingredient in these tasty Nutella muffins is hazelnut flour. While you may be able to find hazelnut flour in your local grocery store or health food store, you can also, easily make your own. To get the 1 ½ cups of hazelnut flour needed for this recipe, place 2 ½ cups of hazelnuts in a food processor or blender. Pulse until the nuts are a fine powder. Do not mix the nuts too long or the oils might start to come out and make the flour greasy.
When you grind the hazelnuts, you can use nuts that have the skins still on or ones which have had the skins removed, both options work fine. If you want to take the extra time to toast the nuts before grinding them, this will also enhance the flavor of the nuts. Like most nuts, hazelnuts are full of nutrients and have a very high content of protein and healthy fats which, as you know, are essential to a keto diet!
Unsweetened cocoa powder and dark chocolate chips are the other primary flavors in these muffins. Unsweetened cocoa powder contains no carbs and will give you that chocolate taste that you want without affecting your state of ketosis. When looking for chocolate chips, use only dark, unsweetened chocolate chips or a keto-approved brand like Lily’s which is sweetened with stevia and has zero carbs. When you eat dark chocolate such as these, you will be lots of beneficial antioxidants and also heart-healthy nutrients. Chocolate can be healthy!
As we mentioned before, these muffins are perfect to make ahead, setting yourself up with a week’s worth of delicious, easy breakfast treats. Make a double batch and store some in the freezer too! A great keto baked good is not as hard as you may think.

- 6 eggs
- 1/4 tsp cream of tartar
- 1 1/2 cups hazelnut flour
- 4 tbsp butter, melted
- 1/4 tsp salt
- 1/4 cup So Nourished granular erythritol
- 1/4 cup unsweetened cocoa powder
- 1/4 cup Lily's dark chocolate chips
- Preheat your oven to 375 degrees F and prepare a muffin tin with paper muffin liners.
- Separate the eggs and then whip the egg white with the cream of tartar until stiff peaks form.
- In a separate bowl, combine the egg yolks, hazelnut flour, melted butter, salt, erythritol and cocoa powder. Blend until smooth
- Fold the chocolate chips into the egg yolk mix.
- Fold the egg whites into the chocolate batter, stirring gently so as not to deflate the whites.
- Scoop the batter into ten muffin cups and then bake for 20 minutes.
- Let the muffins cool in the muffin tin and then enjoy!
