Incredible, Flavorful Keto Chicken and Rice Soup
Cold season is here and this one seems to be the worst yet. Of course, there are lots of things going on in the world that are illness related and we just wish that a big bowl of chicken soup would cure them all. Maybe this low carb chicken soup will! After all, chicken soup is considered to be the cure-all food. Let’s give it a try!
Our chicken soup recipe starts off much like any other chicken soup. You begin by searing the celery and onion in the olive oil. Add the seasonings and mix. Adding the salt, pepper, garlic, thyme and other spices with the oil at the beginning of the recipe helps bring out the flavor of the spices. Heating any kind of herb or spice draws out its potency and makes it even more powerful. This is key to making a chicken soup that is truly amazing!
The chicken stock is poured into the simmering spices and brought to a boil. We like to use low sodium chicken stock just to have a little less salt. You also want to be sure that you get chicken stock rather than chicken broth. Chicken stock is made from the bones of the chicken and it has a richer flavor due to the slow simmering of the bones. It also tends to have more nutrients thanks to the gelatin in the bones. If your goal is to make a chicken soup that will cure any cold in the world, then grab that stock! Of course, chicken broth will work in a pinch but it may not make you un-sick from every illness…
Up to this point, our low carb chicken soup is pretty much like regular, high carb chicken soups. But this is where ours begins to differ. Chicken soup usually is served with some kind of noodles or rice, making it more filling and more like a full meal. However, when you follow a keto diet, most noodles and all rice is a big no. If you still want a filling bowl of soup, you need to find a way to replace the rice. In steps cauliflower!
We pour riced cauliflower into the simmering soup, giving it not only a delicious flavor but also making it an entire meal in a bowl. These days, you can find riced cauliflower in the frozen section of the grocery store or, sometimes, in the produce section. You can also easily make your own cauliflower rice. Wash and dry a head of cauliflower or thaw some frozen, bagged cauliflower. Chop the cauliflower up roughly and put it in a food processor. Pulse the cauliflower until it resembles rice. That’s it! If you don’t have a food processor, a box grater will work as well. Just grate the cauliflower and you’re done.
If you make this low carb chicken soup ahead of time, making some extra to freeze, don’t add the cauliflower rice right away. Freeze the soup without the cauliflower and then add it in right before you are ready to enjoy a big, hearty bowl. You can also just skip the cauliflower rice to make the recipe even simpler.
One thing we can assure is that a piping hot bowl of keto chicken soup will definitely make you feel better. It can cure a cold, a heartbreak or help to fix just a bad day. Hopefully this soup makes all your troubles just disappear.

- Heat the olive oil in a large pot then add the celery and onion. Stir, add the salt and pepper and cook for about 5 minutes, stirring occasionally.
- Add the garlic, thyme and paprika to the pot and stir again, cooking for one more minute.
- Add the broth and bring the soup to a boil.
- Add the chicken and cauliflower and lower the heat to a simmer. Simmer the soup for about 12 minutes or until the cauliflower is tender.
- Taste and add more salt or pepper as needed then scoop into bowls and serve hot.
