A perfect chocolate chip cookie recipe is something that every baker should have on hand. That doesn’t change when you start eating a keto diet- perfect chocolate chip cookies are still necessary! Luckily, this recipe creates delicious, rich cookies that are made with only five ingredients. No one said that chocolate chip cookies need to be complicated!
You may notice that this recipe does not have a traditional leavener in the ingredient list. There is no baking soda or baking powder here! Instead, we use whipped egg whites to help leaven the cookies. When you whip the eggs, you have incorporated a lot of air into the mix. When the cookie batter starts to bake, the air that is trapped inside the whipped egg will start to expand in the heat, pushing the cookie batter upward and creating a leavening effect. Whisk the egg until it is double or even triple the size to ensure that you get as much air in there as possible for nice, fluffy cookies.
Another ingredient in this recipe that helps to create perfect chocolate chip cookies is the So Nourished Gold sweetener blend. This sweetener is similar in color and texture as a traditional brown sugar and tastes rich and complex as well. The best chocolate chip cookie recipes always use brown sugar and now you have a perfect low carb option to use as well! The extra moisture in the Gold sweetener helps keep the cookies chewy. Did you know that 65% of Americans prefer chewy chocolate chip cookies over crunchy? Which cookie group are you in?? I'm definitely a chewy cookie lover but, if you really need that crunch, give these cookies an extra 2 minutes in the oven to get them a little crisper. The recipe works for both chewy and crunchy cookies!
One more ingredient to explore in this recipe is the chocolate chips. Hopefully, you have been able to find a great unsweetened chocolate chip option in a store near you. Look for chocolate that is labeled “unsweetened”, “baking” or “extra dark” when searching for a keto-friendly chocolate. You may also be able to find brands of chocolate like Lily’s that is designed specifically for low carb baking! Dark chocolate and unsweetened chocolate also have lots of powerful antioxidants that help fight free radicals in your body. That means these cookies actually have some health benefits in addition to just being a purely delicious dessert- a healthy chocolate chip cookie? I'll take two!
It is especially important for this recipe to use a chocolate that is of the highest quality since the whole cookie revolves around this one ingredient! If you are only able to find a good unsweetened chocolate bar rather than chips, simply chop the bar into small pieces. You can also try adding other keto-friendly candies in place of the chocolate chips to create a whole new cookie recipe. Diced keto caramels, for example, would be quite delicious! This recipe makes a perfect, versatile and low carb cookie that we know you will enjoy. Happy baking!
