Almond flour also has lots of healthy fats (it is made simply by grinding almonds so all the health benefits of almonds are still there!) that you need on a keto diet. It is such a better choice fo flavor and nutrition when compared to white flour.

Sugar is replaced with monk fruit sweetener which is an all-natural, no-carb sweetener. Monk fruit sweetener is much sweeter than white sugar but happens to be much easier for the body to process. It will give you all the sweetness that you want in a cookie but without any of the carbs- pretty amazing! These small adjustments transform a regular cookie recipe into a low carb treat that is also sugar-free.

You'll appreciate the simplicity of making this dessert, too. It just requires mixing all the ingredients thoroughly and then forming the dough into the perfect cookie size. The cook time is only 13 minutes, and then you can enjoy a snack baked to golden deliciousness. The cookies should keep for about a week when wrapped well and stored at room temperature.   1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Whisk together the almond flour, monk fruit sweetener, baking soda, and salt in a bowl.
  3. Cut in the butter by hand until it forms a coarsely crumbled mixture.
  4. Stir in the egg, vanilla, and almond extract then fold in the dark chocolate chips.
  5. Roll the dough into 1-inch balls and place on the baking sheet.
  6. Bake for 12 to 13 minutes until just browned on the edges.
  7. Cool for 10 minutes then transfer to a wire cooling rack to cool completely.
