- 1 1/4 cup almond flour
- 1/2 cup coconut flour
- 1/4 cup So Nourished powdered erythritol
- 1 teaspoon xanthan gum
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 4 large eggs whisked
- 3/4 cup kombucha
- fresh berries optional
- Preheat the oven to 400°F and grease a 9-inch round cake pan with coconut oil.
- Line the bottom of the pan with parchment then set aside.
- Sift the almond flour, coconut flour, erythritol, xanthan gum, baking soda, and salt in a bowl.
- In a separate bowl, whisk together the eggs and kombucha.
- Whisk the wet ingredients into the dry until the batter is thick and smooth.
- Spread the batter in the prepared pan and bake for 30 minutes until browned and a toothpick inserted in the center comes out clean.
- Cool for 5 minutes in the pan then turn out onto a wire rack to cool completely.
- Serve the cake with fresh berries, if desired.
