Perfect Keto Biscotti

Our recipe is made with almond flour, unsweetened cocoa powder, butter, erythritol, and unsweetened chocolate chips- all of which comes together to make a beautiful, tasty biscotti! And, of course, it will fit right into your low carb, keto diet!

Almond flour is a keto baking staple and our flour of choice here at Tasteaholics. Almond flour tends to bake the best out of all the keto flour alternatives. It is light and fluffy (like traditional flour) and it has a lovely nutty taste. Unlike other keto flours, almond flour does not make baked goods dense and chewy, a problem that coconut flour or chickpea flour can have. Almond flour is also quite easy to find in most grocery stores or online. Almond flour is also reasonably priced. While it may be more than white, all-purpose flour, it is not outrageously expensive. When you consider the fact that there are many more nutrients in a bag of almond flour than white flour, you are getting the quality and nutrition that you pay for! Almond flour is definitely the winner!

Low Carb Chocolate Biscotti

Another ingredient in this recipe that is quite healthy is the unsweetened chocolate chips and unsweetened cocoa powder. Chocolate, in its unsweetened state, has long been known to be nutritious. Chocolate has a high amount of natural antioxidants, even more than blueberries or acai berries which are often pointed to as hallmark foods for antioxidant quantity. Eating foods that are high in antioxidants will protect your cells from free radicals that can play a part in heart disease, cancer, and other major ailments. So, you can add those chocolate chips and cocoa powder to this biscotti happily, knowing that you are not only getting great flavor but also a nutritionally packed food!

Ingredients
Instructions
  1. Preheat your oven to 325 degrees F and line a sheet tray with parchment paper.
  2. Place all the dry ingredients (except the chocolate chips) in a large bowl and whisk together.
  3. Add the wet ingredients and stir until a dough forms.
  4. Fold in the chocolate chips.
  5. Place the dough on the prepared sheet tray in a long log, about four inches wide and ten inches long.
  6. Bake the biscotti for about 22 minutes or until it just begins to feel firm.
  7. Let the biscotti cool on the tray.
  8. Place the log on a cutting board and slice using a serrated knife into pieces about 1 inch wide.
  9. Place the biscotti slices back on the sheet tray, with the cut side down on the tray.
  10. Cook for 10 minutes, flip the biscotti and then cook for another 10 minutes.
  11. Remove from the oven and cool completely. Enjoy!
