You've never had Keto Chocolate Chip Cookies quite like this!
Who doesn't adore a good low carb chocolate chip cookie? There's something so deliciously perfect about the ooey-gooey goodness of warm chocolate chips as you sink your teeth into what has to be the best cookie on earth. Chances are, you grew up with these cookies on your table. However, now that you've transitioned to low carb, you probably assume that you'll never get to experience this scrumptious cookie ever again. WRONG! With a few small changes, you can still gobble up your fair share of chocolate chip cookies without cheating on your diet.
What's the catch? Almond flour makes this version of a classic favorite much more low carb-friendly. You won't believe how close it is to the regular kind! In fact, you could probably serve these up to just about anybody and they won't be able to tell a difference. Recipes like this make following a keto diet much easier (and more delicious!).
Almond flour is much lower in carbs than traditional white, all-purpose flour. However, just because it is lower in carbs doesn't mean it has less flavor. In fact, almond flour has way more flavor than white flour ever could! That is because almond flour is simply made by grinding up almonds. Just one ingredient is all it takes to make a fluffy, perfect, flour. While you can likely find almond flour in just about any grocery store, you can also make your own almond flour in about a minute. Place sliced almonds in a food processor and pulse them until they are crushed into a fine powder. Don't process too long or the solid in the almonds may turn the flour into a greasy dough, so, the second the flour looks nice and fine- stop!
One more little amazing thing about almond flour (we could clearly talk about it all day!)- it is gluten-free. That means these cookies are perfect for your celiac or gluten averse friends! How awesome is it that you can make keto chocolate chip cookies and gluten-free chocolate chip cookies just by using one recipe? Pretty cool.
When you choose your chocolate chips, be sure to use ones that are sugar-free. Chocolate chips often have lots of sugars added in but, luckily, you should be able to find sugar free chips or unsweetened chocolate chips in your grocery store. We love the Lily's brand which sweetened the chocolate chips using erythritol meaning they have zero carbs but still taste sweet. Grab a few bags and keep them in your pantry- you will likely be making these cookies frequently and need more chips!

- 1/2 cup coconut oil
- 2 large eggs whisked
- 1 tablespoon vanilla extract
- 1 cup So Nourished powdered erythritol
- 2 1/2 cups almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Pinch xanthan gum
- 1/2 cup sugar-free chocolate chips
- 1/4 cup chopped walnuts
- Preheat the oven to 350°F and line a baking sheet with parchment.
- Beat together the coconut oil, eggs, and vanilla extract in a mixing bowl.
- Whisk in the erythritol and salt until well combined.
- In another bowl, whisk together the almond flour, baking powder, salt, and xanthan gum.
- Stir the dry ingredients into the wet until it forms a dough.
- Fold in the chocolate chips and walnuts.
- Shape the dough into 1-inch balls and arrange them on the baking sheet.
- Bake for 10 to 12 minutes until just browned on the edges then cool before serving.
