  1. Preheat the oven to 350°F and line two baking sheets with parchment.
  2. Whisk together the almond flour, powdered erythritol, cocoa powder, baking powder, and xanthan gum in a large mixing bowl.
  3. Beat in the butter, eggs, and vanilla extract until well combined.
  4. Pinch off pieces of dough and roll them into 24 balls.
  5. Roll the balls in powdered erythritol or powdered monk fruit sweetener.
  6. Place the cookie balls on the baking sheets, spacing them 2 inches apart.
  7. Bake for 15 to 20 minutes until the cookies are firm on the edges. Cool completely.
