Low carb coconut almond candies are the next best thing!
If you're anything like me, you absolutely adore bite-sized candies as a dessert! Our keto coconut almond candies are the perfect treat to have around your house because each bite is bursting with yummy coconut flavor, topped with crunchy almonds, and rich dark chocolate. There's just nothing better than a little sweet snack to get you through your day.
What's not to love when it comes to low carb desserts, anyway? Not only does it just take a few minutes to throw this recipe together, but you don't even have to turn on your oven. You will need to chill the little coconut and almond clusters so they form properly and so the dark chocolate sets up nicely. However, this only takes a few minutes and then you just need to simply store the goodies in an airtight bag in the fridge. Easy-peasy, right?
So you may be wondering how this amazing dessert gets its sweetness. That's not sugar you are tasting! In fact, it is a sugar alcohol known as erythritol. It's extremely low in calories, low carb, and the body processes it much more easily than traditional white sugar. Plus, it's just enough sweetness to curb your sweet tooth without sacrificing your diet.
You may be asking yourself, when is a good time to make this particular keto dessert? Is there ever really a wrong time to indulge in a tasty (and keto-friendly!) treat? NEVER! This is an excellent treat to add to a pot luck dessert bar or to simply have around the house as a sugar-free and low carb option. Healthy desserts are the best desserts! Not to mention, if you are serving desserts to a mixed crowd, it's always a good idea to serve up desserts that anybody can enjoy. Whether you are a low carb foodie or just watching your sugar intake, this incredible bite-size candy is just what you need.

- 2 1/2 tablespoons coconut oil
- 1/4 cup canned coconut milk
- 6 tablespoons So Nourished powdered erythritol
- 1 teaspoon vanilla extract
- 1 cup shredded unsweetened coconut
- 24 whole almonds (raw)
- 4 ounces dark chocolate (90% cacao) (chopped)
- Line a baking sheet with parchment and set aside.
- Melt the coconut oil in the microwave then stir in the coconut milk, powdered erythritol, and vanilla extract.
- Stir in the shredded coconut then shape the mixture into 12 small mounds on the baking sheet – top each mound with two whole almonds.
- Melt the dark chocolate in a double boiler then stir smooth.
- Spoon the chocolate over the coconut almond mounds on the baking sheet, lifting them to coat the bottoms as well.
- Chill until the chocolate hardens then store in an airtight container in the fridge.
