- 1 small avocado chopped and pitted
- 2-3 tablespoons So Nourished powdered erythritol to taste
- 1/2 teaspoon vanilla extract
- 1/4 cup heavy whipping cream
- 2 tablespoons cocoa nibs

- Beat in the erythritol and vanilla until smooth, another 1 to 2 minutes.
- In another bowl, whip the cream until stiff peaks form.
- Fold the whipped cream into the chocolate mixture then spoon into a piping bag.
- Pipe the mousse into dessert cups and top with cocoa nibs to serve.
