- 8 large egg whites room temperature
- 3/4 teaspoon vanilla extract
- 1/3 teaspoon cream of tartar
- 1/2 cup unsweetened cocoa powder
- 1/4 cup chopped dark chocolate at least 80% cacao
- Pinch salt
- Preheat the oven to 300°F and line a baking sheet with parchment.
- Beat the egg whites with the vanilla, cream of tartar, and a pinch of salt in a bowl until stiff peaks form.
- Fold in the cocoa powder and dark chocolate until just combined.
- Spoon the batter onto the baking sheet in two dozen large rounds, spacing them 2 inches apart.
- Bake for 22 to 25 minutes until the cookies are dry on the outside.
- Transfer the cookies to a wire rack to cool for 5 minutes before serving.
