- 12 ounces dark chocolate 85% cacao
- 1/4 cup canned coconut milk
- 1/2 cup So Nourished powdered erythritol
- 2 tablespoons coconut oil
- 1 ounce dark rum
- 1/4 cup unsweetened cocoa powder
- Melt the dark chocolate and coconut milk in a double boiler over low heat.
- Whisk in the powdered erythritol until smooth then whisk in the coconut oil and rum.
- Pour the mixture into a glass dish and freeze for 15 to 20 minutes until firm
- Scoop the chocolate mixture with a melon baller and roll into balls then freeze 5 minutes.
- Roll the truffles in cocoa powder and store in an airtight container
