Healthy Nutty Butter Cookies
When you are looking for a good cookie recipe, so many out there are made with white, all purpose flour. While this is not only off limits when you are on a keto diet, white flour also adds almost no nutritional value to recipes. Why do people keep using it?! Especially when there are so many great alternatives out there that are healthier, tastier and actually add some nutrients to a recipe. This recipe for hazelnut flour butter cookies is the perfect example of how no one, even those who aren’t on a keto diet, should ever need to use white all-purpose flour.
This cookie recipe uses both hazelnut and almond flour but the hazelnut is the taste that stands out the most. Hazelnuts are native to Turkey, Italy, Spain and also the US where they grow on trees year round. While they are delicious raw, most of the time they are roasted to help bring out their natural oils and enhance their flavor. You can likely find hazelnut flour in both raw and roasted forms and both options will work well in this recipe.
All nuts are very healthy and can add a lot to a keto diet, including hazelnuts. Hazelnuts and almonds both have a high amount of protein, fats, minerals and vitamins while also being low in carbohydrates. Hazelnuts specifically have a good amount of vitamin B6, folate, potassium and zinc. They also have beneficial omega-6 fatty acids and also omega-9 fatty acids. All great for a healthy keto diet!
When you think of butter cookies, you may think of a smooth, melt in your mouth, kind of cookie and that is exactly what you will get when you make this recipe. The cookie dough is simple enough to make, beating the butter and erythritol together then adding the egg and vanilla followed by the dry mix. The batter is quite soft after being mixed so it is rolled into a log and then placed in the fridge to cool, allowing the butter to firm, making the cookie dough easier to work with.
The cookie dough is sliced and placed on a lined sheet tray and then baked to golden perfection. Not only will these cookies taste amazing but they are also quite beautiful thanks to the golden toasted nuts that are baked inside. While these cookies are perfect plain, you can dust them with some powdered erythriol as a garnish or sandwich some keto jelly between two cookies for an extra special dessert. No matter how you enjoy them, they will put any white flour cookie recipes to shame! Enjoy!

- 1/2 cup butter
- 1/4 cup So Nourished erythritol
- 1 egg
- 1/2 tsp vanilla extract
- 1 cup hazelnut flour
- 3/4 cup almond flour
- 1 tsp baking powder
- Cream the butter and erythritol in a mixer with a paddle attachment. Beat until fluffy.
- Add the egg and vanilla extract to the bowl and blend into the butter slowly, scraping down the sides of the bowl to ensure everything is incorporated.
- Add the flours and baking powder and mix into a batter.
- Scoop the cookie dough onto a piece of plastic wrap or parchment paper, placing it in a line. Wrap the dough in the plastic and roll gently into a log about 2 inches thick and 8 inches long.
- Place the log in the fridge for 30 minutes to chill. Do not keep it in the fridge too long or it will crumble.
- Slice the log into ¼ inch thick slices and place on a parchment lined sheet tray and bake in a 325 degree F oven for 14 minutes or until the edges begin to turn golden brown.
- Let cool on the tray and then enjoy!
