- 1/3 cup butter (softened)
- 1/2 cup So Nourished powdered erythritol
- 1 teaspoon vanilla extract
- 2 1/2 cups almond flour
- 1 to 2 tablespoons So Nourished granulated erythritol
- Preheat the oven to 350°F and line a baking sheet with parchment.
- Beat the butter and powdered erythritol together until light and fluffy.
- Add the vanilla extract and beat smooth then beat in the almond flour, ½ cup at a time.
- Spoon the dough onto the prepared baking sheet using rounded tablespoons.
- Gently flatten each cookie by hand then sprinkle with granulated erythritol.
- Bake for 12 minutes or until the edges are golden brown. Cool completely on the pan.
