Keto Cream Cheese Swirl Brownies

Our keto brownies are made using unsweetened chocolate chips which you can easily find in the baking aisle of your local grocery store or you can order online. Unsweetened chocolate chips or dark chocolate chips can be used, however, if you are using dark chocolate chips, be sure to read the package label and make sure there are no added sweeteners.

It is full of natural antioxidants, has been shown to improve blood flow and lower blood pressure, and can even help reduce the risk of heart disease. Hurray for dark chocolate! To make the cream cheese brownies, we blended cream cheese, one egg, erythritol, and vanilla together to make a sweet, flavorful cream cheese layer. Adding cream cheese to the brownies not only brings a sweet and tangy flavor to the dessert, but it also increases the fat content. Each serving contains 25 grams of fat which is totally a good thing! Keto dieters need to make sure they get enough fats! Fats do equal fuel and energy and what better way to get some healthy fats than by eating a brownie!
The cream cheese and chocolate brownie layers are gently swirled together to make a dessert that is not only incredibly delicious but also beautiful. The trick to mastering the brownies decorative swirl to only pass your knife through the brownie and cream cheese mix once or twice- you want to swirl the two together gently rather than mix them heavily.

- 1/2 cup unsweetened chocolate chips
- 1/2 cup butter
- 3 eggs
- 1/4 cup So Nourished granular erythritol
- 1 tsp vanilla
- 8 ounces cream cheese
- 1 egg
- 3 Tbsp So Nourished powdered erythritol
- 1 tsp vanilla
- Preheat your oven to 350 degrees F and then grease an 8x8 inch cake pan. Set aside.
- Start by making the chocolate batter for the recipe: Melt the butter and chocolate in a double boiler, stirring occasionally to blend the ingredients together.
- In a separate bowl, mix the 3 eggs, ¼ cup erythitol and 1 tsp vanilla extract.
- Add the melted chocolate and butter mix to the egg mixture and stir well, beating until smooth.
- Pour the chocolate batter into the prepared pan.
- Make the cream cheese layer next. Beat the cream cheese with the powdered erythritol until fluffy.
- Add the one egg and 1 tsp vanilla extract to the cream cheese and stir so there are no lumps.
- Pour the cream cheese mix over the chocolate mix and then use a spatula or knife to gently swirl the batter together. You should really only need to do one pass of the knife to swirl it well (you do not want to fully blend them together)
- Cover the pan with foil and then bake in the preheated oven for 45 minutes or until a toothpick comes out cleanly from the center of the brownies.
- Let cool then slice and enjoy!
